Hi,
It would be nice if the plugin passed the current user's language so the payment form uses the same language that was on NopCommerce (English or French, here)

It would also be nice if we could determine which fields are sent to Moneris and what is used to validate the authenticity of a payment (ex: Zip/Postal Code) or which field is used for the order number (currently seems to be the order guid and would like the order number).

We could add support English and French using the ISO language code.

The plugin sends to Moneris all fields for billing and shipping addresses.

We can't do it. We don't know about the future order ID before the payment.

How fast can the language feature be added?

For the validation of fields, I'll look up on the Moneris account. As for the order Id, I've looked at the source of another payment plugin we have and we indeed don't have access to the order ID. I just did not notice that fact because we don't need it with the other system.

I need too see on my workflow (I could do custom work on holiday).

If the payment is created after the creating the order we could export order ID, if the payment is created before the creating the order we could not export order ID.
